Raw means the honey is never heated above 35°C — about the temperature of the hive — and never finely filtered. Every enzyme, every grain of pollen, and the natural propolis remain in the jar exactly as the bees made them. Heat-treating honey extends shelf life and lightens colour, but it kills off the very things that give raw honey its complexity.
Because it is different. We harvest in small, traceable batches. Colour, viscosity, and flavour all shift with the season, the floral source, and even how much rain fell that month. Every jar is labelled with its batch, so you can taste the year.
Not at all — it has just gone to sleep. Crystallisation is a natural sign of pure, raw honey. To return it to liquid form, stand the jar (lid loosened) in a bowl of warm water (under 40°C) for 15–20 minutes. Never microwave: it destroys the living enzymes.
A cool, dry pantry away from direct sunlight is perfect. Never refrigerate — it speeds up crystallisation and dulls the flavour. Sealed properly, raw honey effectively never spoils. Archaeologists have eaten 3,000-year-old honey from Egyptian tombs.
No. As with all raw honey, we recommend against feeding it to infants under 12 months, due to a small risk of infant botulism. For everyone else: enjoy.
Where the bees go, how we extract, and what makes Tarkine honey unique.
Our apiaries sit on the eastern edge of the Tarkine wilderness — over 477,000 hectares of cool-temperate rainforest in north-west Tasmania. For Leatherwood, we float hives deep into the rainforest during the six-week summer bloom. For Manuka, we work the coastal heathlands. Every jar lists its specific origin.
Leatherwood (Eucryphia lucida) grows only in Tasmania's rainforests. The honey is spicy, perfumed, almost floral — best on a cheese board. Manuka (Leptospermum scoparium) grows in remote heathlands; the honey is darker, earthier, with measured antibacterial activity from methylglyoxal (MGO). We grade every Manuka batch and print its MGO number on the jar.
Every batch is independently lab-tested for moisture, HMF (a marker of heat damage), pollen profile, and — for Manuka — MGO content. We publish the test results on each product page. Honey laundering is a real problem in the global supply chain; we want you to see the receipts.
We use cold extraction. Frames are removed gently, capped wax shaved off, and the honey spun out at hive temperature. Bees are never crushed and we always leave them enough honey to overwinter — we take only the surplus. No corn syrup feed, no migratory pollination contracts.
Organic certification for honey is complex because bees forage over a 4 km radius — wider than any single farm. Our hives sit in protected wilderness with no agriculture nearby, which is functionally cleaner than most organic certifications can verify. We choose transparency over a label.

Orders placed before 2pm AEST (Mon–Fri) are dispatched the same day from our Tarkine apiary. Metro Australia arrives in 2–4 business days; regional in 4–7. You'll get tracking the moment your parcel leaves us.
Flat $9.50 across Australia. Free on orders over $80. Tasmania local pickup is always free — just choose "Collect from apiary" at checkout.
We currently ship to New Zealand, Singapore, Japan, the United Kingdom, and Hong Kong. Flat $24 AUD, 7–14 business days. Customs duties (if any) are the buyer's responsibility. Email us if your country isn't listed — we can sometimes arrange one-off shipments.
Honey is remarkably stable — it has been kept for thousands of years in worse conditions than an Australia Post van. Hot transit may speed up crystallisation, but never affects safety, purity, or flavour. If your jar looks textured on arrival, see the crystallisation tip in "About the honey".
Photograph the damage and email it to us within 48 hours. We'll replace any broken jars at no cost — no questions, no postage. We pack with kraft pulp and recycled cardboard, so breakage is rare, but glass is glass.
How to send something back and how we handle it.
30 days, full refund — even if you've opened the jar and decided it isn't for you. Three generations of beekeepers stand behind every harvest, and we'd rather a jar come home than disappoint you.

Absolutely. The simplest way is to refund the original and place a fresh order — we'll cover return shipping. If you'd prefer a direct swap, just tell us in your email.

Yes — corporate gifts, wedding favours, hotel turn-down amenities, end-of-year client gifts. We can include custom hang-tags, kraft cards with your message, and ship direct to multiple addresses. Minimum order is 20 units.
The glass jar is endlessly recyclable. Lids are tin (recyclable kerbside). Outer cartons are FSC-certified, plant-printed, and home-compostable. The kraft fill is shredded post-consumer paper. The only plastic is the tamper-evident seal — which we are actively working to phase out.
