Known for its antibacterial properties, the naturally occurring compound Methylglyoxal was identified in 2006 as the dominant antibacterial constituent. This product's Methylglyoxal content is measured and labeled. Appreciated for both eating quality and health benefits, it has a strong, earthy flavour.
